One week prior to harvest we like to walk the Mer Soleil Vineyard to see our fruit with a little suntan. We believe it adds another layer of flavor to our Chardonnay. Thanks to our unique trellis systems like Open Lyre, we are able to make sure that one side of a cluster gets a nice suntan while the other side is shaded. Another cool aspect about farming here in the Santa Lucia Highlands is that our clusters show a character known as “Hens and Chicks.” This means that there are several smaller berries growing within a cluster of full berries. These smaller berries don’t have any seeds which reduces bitter qualities in the wine. Here’s a video that shows this in more detail.
