The Wine and Cheese Conundrum

A real conundrum that people have is what cheese to pair with white wines.  Well, when it comes to Conundrum white wine, I personally like harder / aged cheeses, but it’s important to note that cheese is so subjective.  I enjoy Asaigo-style, Grana Padano, Parmigiano-Reggiano, Piave, Mahon sec and Manchego cheese to name a few.  With crackers or bread you can’t go wrong with Brie type cheeses with their buttery and mushroomy flavors.  Camembert, Blue Cheese and goat milk cheeses are fun too.  Everyone has a different palate and I like to encourage my friends to embrace what flavors they prefer regardless of what critics suggest. What inspired Conundrum?

Drinking this wine always brings back wonderful memories of my father, Charlie Wagner Sr. He was the kind of guy that would blend his favorite wines together at the dinner table.  Sometimes it would be Zinfandel and Cabernet or Reisling and Sauvignon Blanc.  What I admired most about him was his innovative curiosity to bend the rules a little bit.  Thanks to his passion for wine and discovery, we have Conundrum.  Conundrum is a white wine, a blend of 5 varietals that symbolize the very expression of California.  With the help of Jon Bolta, my very good friend and winemaker, I believe we have successfully produced a white table wine that can be paired with just about any meal.  Here is a little video that tells that story behind the making of this wine.
